Salad and more Salad
For Conference Weekend we always get together on Sunday for Brunch and then Dinner after. Brunch was good. I made an egg casserole dish and there was French Toast, Sausage links, bacon, monkey bread And I am sure I am missing something. It was good. Conference was good too! So after conference we had Ham and Cheesy potatoes. I made this Ramen Salad and it was yummy! It still is yummy!
Ramen Salad:

- 1 head of cabbage
- 3 cups of chopped chicken
- 1 cup of slivered almonds
- ¼ c. walnuts or favorite nut for taste
- 2 packages of ramen noodles
- 6-8 chopped green onions
- mix together
Dressing:
- 2 tbsp vinegar
- 2 ramen noodle seasoning packets
- 4 tbsp sugar
- ½ tsp pepper
- 1 cup light oil (olive, canola)
- Mix together well. Pour over salad when ready to serve…mix and enjoy

Potato Salad
5 lbs. Red Skin Potatoes
Boil until slightly tender. Cut into small cubes.
Mix together
1 cup Mayo
1 cup Miricle Whip
1 small jar of Dill pickle relish
1 small jar of green olives (reserve juice for later)
Salt and pepper and paprika to taste
Add chopped onion and chopped celery to taste.
mix together with potatoes. Chill until ready to serve. This is best the next day!

April Fools!
Mini Hamburgers April Fool Style!
For Madison and Wills classes I made these cute treats for them to share with their class mates. They were a big hit!
They are vanilla wafers with apple jelly spread on top with sesame seeds. A peppermint patty held down with a dollop of frosting. Red and yellow frosting and green colored coconut. They were easy to make and fun to eat. Thanks to Kirsty for running to the store for me to get me some more wafers. She owed me anyway from the April Fools joke she tried to pull on me.
